Switch up the usual taco or burrito routine for sweet potato tacos. I love adding a little spice to heat up my sweet potatoes. I personally think it's the best way to enjoy them. And just like most other Mexican-inspired dishes, you get a lot of freedom to throw in a little of this and that to suite your own taste and dietary preferences. Bonus--it's super healthy!

Cajun Seasoned Shrimp and Grits
I am completely in love with these grits. I crave them so often that I have to force myself not to make them because I don't want to get tired of them. I have met so many people who are completely put off by them, but my guess would be that they ate grits that were not made properly. Often, a lot of northerners can be turned off by the texture of grits. It doesn't help that they typically have only tried them as the bland, microwavable packet, and/or lumpy and lackluster. You really don't want to skimp on quality. I would recommend a kicked up version (such as this recipe) if you've never tried them before--there is just so much flavor going on that it's difficult not to like them. Also, as I've stated before, I am a vegetarian, my husband is not. For us, this is another easy meal to prep both ways. As another side note, if you live in an area where grits are more difficult to come by, it's easier than ever to purchase them thanks to the internet. You can have them delivered to your door with the quick click of a button.
Cabbage and Noodles/Haluski Recipe
This is absolutely the recipe that you never knew you needed. When I think of my favorite comfort meal, this is the one. It's super simple to cook up, and even easier to enjoy. I know it's not the healthiest way to eat cabbage, but it's by far my favorite--
Rich and Simple Marinara Sauce
I have a deep love for all things pasta. A plate of spaghetti can almost always soothe my soul. Like, pasta love runs deep 😂. I feel like every family needs a go-to sauce recipe, and I've been on a quest to find ours. I have spent years trying to find my 'just right' sauce, and many times I've come close--but just not quite what I was looking for. I think I've finally gotten it right! Try it out served over angel hair (or mixed in). Just don't forget to top it with fresh Parmesan and basil!
Peppers and Sausage Pasta
This above recipe was made with thin spaghetti, since that is all we had on hand at the moment. You can use what ever you prefer, but I recommend a rigatoni or penne.
